Of course, we now have to add a couple flats of bottled water for sufficient thermal mass to stabilize it.

Until we get more wine :-)

Because one of the tricks to it running efficiently is that the thermal mass of the cooled liquid acts as a huge thermal reservoir. Once it's all cooled down it takes less work to keep it cool. If there isn't enough fluid stored in the cabinet, opening the door lets in enough warm air to disturb the equilibrium far enough that the chiller has to work overtime.

We're painfully low on white at the moment. It's mostly CA micro-winery reds. Tons of petit sirah, quite a bit of really good merlot (yeah, "really good" and "merlot" in the same sentence), some wierd-ass blends...
